How can I configure my back and lay strategies to automatically stop once the overall daily profit target across all strategies has been reached?

At strategy "Safety settings" tab you can add "Max profit/loss for selected strategies" rule. Please read manual for details on this rule, as it will not limit your loss, it will stop strategy from placing new bets once max profit/loss is exceeded:
