with one strategy I would like to bet on Men's matches only. Is there any way to set it up that it would be only men's matches and no women's or doubles?

To avoid double matches you can use "Market conditions->Markets filter" rule, set it to not to bet on markets whose name contains character / as that character is used to separate player names.

There is no option to allow only man or woman matches. Only solution is to create CSV list of player names and to use it in "Markets filter" rule.
